It is precise in every respect providing sophisticated technology to support each chef’s individual craftsmanship. At the same time, it is robust, easy to operate and facilitates a high quality of food: crispy crusts, juicy roasts, intense aromas and rich colours. Even vitamins and minerals are preserved. Fewer raw materials are required, it reduces the workload and also improves the energy balance. This is due to the measuring and control centre precisely regulating the consistent cooking cabinet climate and individually adjusting it to the respective products.
Steam Mode – From 30 °C to 130 °C. The steam generator with steam adjustment produces hygienically fresh steam. Together with the constant cabinet temperature and optimal steam saturation, this provides a consistent cooking process. For appetising colour and the retention of nutrients and vitamins.
Combi Steam Mode – The advantages of steam combined with the benefits of convection heat: short cooking time, reduction in shrinkage and intensive aromas with appetising colours. For excellent results. No cooking loss, no drying, but high quality.
